Instructions
Make the Sugar Cookie Dough
Sift together the flour, baking powder, and salt. Set it aside.
3 Cups Flour,
½ tsp Baking Powder,
½ tsp Salt
In a large bowl, beat together the butter and sugar.
2 Sticks Unsalted Butter,
1 ⅓ Cups Sugar
Add the vanilla extract.
2 tsp Vanilla Extract
Add in the eggs, one at a time.
2 Eggs
Gradually add in the flour mixture. Mix only until just combined.
Divide and Color the Dough
Divide the dough in half. Shape that half into a flat circle, wrap it in plastic wrap, and place it into the fridge.
Break off about a third of the other half and set it aside.
Add several drops of red food coloring to the larger section.
Red and Black Food Coloring
Mix in the food coloring by folding the dough over and kneading it several times.
Once it’s the color you’d like, shape it into a disc and wrap it in plastic wrap. Then place it into the fridge.
Add black food coloring to the smallest section. Kneed in the color, wrap it in plastic wrap, and place it in the fridge.
Shape the Pokemon Sugar Cookies
Break off a piece of the plain dough and roll it into a log.
Break off a section of the black dough and roll it into a thin rectangle that’s the same length of the log.
Brush off any extra flour. Then use the pastry brush to paint on some water onto the dough.
Wrap it around the white log.
Form identical rectangles out of the red and white dough. Make sure it’s the same length as the log you just made.
Then make two skinnier rectangles out of the black.
Brush them both with water and attach them to the sides of the white dough.
Then wipe one side of red dough and attach it to one of the black stripes.
Then wrap it up and put in the fridge.
Once hardened, roll it out a bit so it connects all of the colors and is taller than the circumference of the black log.
Brush it with water. Then wrap it around the black log.
Use your fingers to connect the ends around the log and then roll it so it’s all one uniform log.
Cut and Bake the Cookies
Cut the cookies, making them roughly 1/2 in wide.
You may need to reshape them a bit to form a nice even Pokeball cookie.
Place the Pokemon sugar cookies onto a baking tray lined with either parchment paper or silicone mat.
Depending on the size of cookie you cut, they’ll bake for 10-30 minutes. Then place them onto a cooling rack.
